Sweet and Spicy Grilled Shrimp

Fast + delicious = perfect summer food. The combination of chipotles and Honey makes this recipe irresistible and a must have for poolside entertaining! Serve with Lime Cayenne Mayo on the side and you have the perfect appetizer. Add a salad or serve this over rice & your meal is complete needing only the addition of your favorite poolside beverage!
- 1/4 cup honey
- 1 tablespoon minced canned chipotle chile in adobo
- 2 garlic cloves, minced
- 1/2 teaspoon kosher salt
- 1 lb large shrimp, shelled and deveined
- 2 tablespoons fresh cilantro, minced
In a large bowl, combine the honey, chile pepper, garlic and salt. Add the shrimp and toss to coat. Cover and marinate at room temperature for 20 minutes or in the refrigerator for 1 hour. Remove from the marinade and discard any remaining marinade.
Thread the shrimp through the tail and head (2 or 3 per skewer) onto small metal skewers or soaked wooden skewers.
Grill over Direct High heat for 2 to 4 minutes. Turn once halfway through grilling time. Place skewers on a serving dish & sprinkle with the cilantro.
Lime Cayenne Mayo
- 1 cup of mayo
- 1 tsp grated lime rind
- 1/2 teaspoon ground cayenne pepper
- 4 tablespoons fresh lime juice
Mix together, cover & chill until ready to enjoy!
